Cutting Mango!

headgehog-mango

Here is an easy and fun way of preparing mangos, sometimes called the hedgehog method.

  • First, use a sharp knife to fillet each side of the mango, cutting off the “cheek”. Get as close to the pit as you can.
  • Next, on each cheek, make cuts in the mango about ½ inch apart in a criss-cross pattern, but don’t cut through the skin.
  • Now, push the skin from underneath, popping the slice inside out! You now have cubes that are easy to spoon off. Don’t mind a little mess? Go back and eat the small amount of fruit left inside the peel and around the pit.
